Easy Mango and Chicken Salad with Coconut Caesar Dressing

This recipe is so simple and takes hardly any time to prepare. You might think it strange putting the garlic and rosemary inside the chicken, but this way the flavors really get absorbed into the meat as it cooks. If you don’t have the Herbs de Provence, then this will work just as well either without herbs, or using some that you do have.
Slow Roasted Chicken

Ingredients: chicken, chicken feet, sea salt, onions, carrots, celery, garlic, bay leaves, thyme, lemon (optional), extra virgin olive oil (or chicken fat), water.
Using a slow cooker to roast meat leaves it tender and juicy, especially if you rest it for a few minutes before serving. You do not need to tie the legs together, but it can help to cook the chicken more evenly and is stops the vegetables and lemon from escaping from the cavity. To make sure the chicken is cooked through, slide a knife into the thickest part and the juices should run clear. If there is a hint of pink then increase the cooking time.

Ginger is such a handy ingredient to have around as it goes so well with so many foods. It can easily be stored in the freezer, so you don’t need to go buy it every time you need it. The chicken legs in this recipe will release enough liquid to form a ginger sauce at the bottom of the dish which can then be spooned over the finished meal. If you like the legs to be brown when you serve them, take the lid off for the last 15 minutes of cooking.
Honey Lemon Chicken
