One of my favorite foods to make on the AIP diet (autoimmune protocol) is salads. And AIP chicken salads are one of the easiest recipes!
If you have leftover roast chicken, then this is AIP chicken salad recipe is perfect for it. But if you don’t have any leftovers, then just bake or poach a chicken breast.
And for the dressing, I’ve made a simple honey and lemon salad dressing that you can also whip up in a few minutes!

How To Make This Easy AIP Salad:
Here’s a simple AIP salad dressing – it uses just 3 simple ingredients.
To me, the olive oil you use in salads can make a huge difference to how delicious that salad tastes. So, make sure you use a high quality olive oil for an enhanced flavor.
And you can create your own variations of this AIP chicken salad – change up the fruit in this recipe. Instead of strawberries, why not use blueberries or even apples! And instead of arugula, you can use kale or spinach.

For the salad:
- 1 chicken breast (approx. 200 g), cooked and diced
- 2 strawberries or other berries or other fruits, sliced
- 2–3 oz (75 g) salad leaves (I like arugula)
For the dressing:
- Mix all the dressing ingredients together.
- Toss salad together with dressing.
