- Add the olive oil in a large skillet over medium-high heat. Add the chicken to the skillet and brown, skin-side down, until golden and crispy.
- Peel and halve all the garlic cloves. Add the garlic cloves and warmed chicken broth to the crockpot. Use tongs to remove the browned chicken thighs from the skillet and transfer them to the crockpot, placing them skin-side up, with the chicken broth and garlic cloves.
- Cook the chicken thighs on high for 3 hours or on low for 4 to 5 hours.
- Season the chicken with salt, to taste, and serve garnished with chopped fresh chives. The softened garlic cloves can be served with the chicken if desired.
