AIP German Sausage Buddha Bowl Recipe

Description

A great lunch-box idea you can enjoy hot or cold.


Ingredients

  • 1 Tablespoon (15 ml) of olive oil 
  • 2 sausages of your choice (225 g)
  • 2 handfuls of baby spinach (30 g)
  • 1 carrot (50 g), peeled and shaved with a vegetable peeler
  • 1/4 red onion (28 g), peeled and thinly sliced
  • 1/2 cup Savoy Sauerkraut
  • salt

Instructions

  1. Cook the sausages according to the package instructions. If the sausages are ready-cooked, brush the sausages with half the olive oil and bake in a preheated oven (355°F / 180°C) for 10-15 minutes until golden on the outside. You may want to flip them over using tongs halfway through.
  2. Remove the sausages and slice into thick chunks.
  3. Drizzle the remaining olive oil over the baby spinach. Toss well to coat then divide between two bowls. Add the carrot shavings, onion, sauerkraut, and sausage to each bowl.
  4. Season with salt and enjoy!
