A great lunch-box idea you can enjoy hot or cold.
- Cook the sausages according to the package instructions. If the sausages are ready-cooked, brush the sausages with half the olive oil and bake in a preheated oven (355°F / 180°C) for 10-15 minutes until golden on the outside. You may want to flip them over using tongs halfway through.
- Remove the sausages and slice into thick chunks.
- Drizzle the remaining olive oil over the baby spinach. Toss well to coat then divide between two bowls. Add the carrot shavings, onion, sauerkraut, and sausage to each bowl.
- Season with salt and enjoy!
