Ham is delicious, and a tradition at many holiday parties. This AIP homemade ham recipe will wow the crowd every time you make it.
Why Make Homemade Ham?
Ham tends to be a heavily preserved meat. In addition to all the preservatives, most store-bought ham is swimming in sugar and may contain pepper as well.
Suffice to say off-the-shelf ham is not a great option for your autoimmune diet. Making it yourself is the best way to go.
And, with only 10 minutes of prep time, you’re not adding a lot of hassle and stress to your big dinner.
What is Gammon?
You’ll see that this recipe calls for gammon. Like ham, gammon is the hind leg of pork. It will come salted, brined, or smoked.
You’ll have to ask the butcher for your boneless gammon. It will be provided raw and must be cooked.
Cooking the gammon will give you ham. And not just any ham – delicious, savory ham without all the unnecessary ingredients that would derail your AIP diet.

- 28 oz raw boneless gammon (800 g) (ask your butcher for this – it’s the piece of pork butt that is used to make ham)
- 1 onion, peeled and roughly chopped
- 1 carrot, roughly chopped
- 1 celery stalk, roughly chopped
- 2 garlic cloves, peeled and roughly chopped
- 1 teaspoon whole cloves
- 1/4 cup salt
- Add the gammon, onion, carrot, celery, garlic, cloves, and salt to a large pot and fill with cold water.
- Bring the pot to a boil and remove any foamy impurities on top.
- Reduce the heat to a low simmer and cover with a cartouche made with parchment paper (or half cover with a lid). Simmer for 90 minutes, then remove the pan from the heat and allow the ham to cool in the liquid.
- Slice into thin pieces and enjoy with your favorite AIP-friendly condiments.
