Refreshingly sweet and acidic popsicles that will be popular with kids and adults alike.
- 2 1/4 cups (500 g) of water
- zest of 1 lemon
- 1/4 cup (60ml) of fresh lemon juice
- 1/4 cup (60 ml) of honey
- Place the water, lemon zest, and lemon juice in a pot and bring to a boil. Remove from heat and stir in the honey. Allow the mixture to cool completely.
- Once cooled, pour into 6 popsicle molds (3.5oz / 100g capacity each) and place in the freezer until frozen solid.
