AIP Lime and Cilantro Ice Cream Recipe

The subtle cilantro flavor adds a twist to this tropical ice cream.


  • 2 cups (480 ml) of canned coconut milk
  • Small handful of fresh cilantro, finely chopped
  • 2 limes, juice and zest
  • 1/4 cup (60 ml) of honey


  1. Pour the coconut milk into a large bowl and add the chopped fresh cilantro. Combine well using a hand blender. Cover the bowl with plastic wrap or a clean towel and leave for 30 minutes for the cilantro to infuse with the coconut milk. 
  2. Strain the mixture through a fine mesh sieve or cheesecloth and discard the cilantro. Add the lime juice and honey to the coconut milk and stir well to combine. 
  3. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  4. Serve the ice cream once it has been churned and freeze any leftovers.
