Instructions

  1. Place the dates, carob powder, and melted coconut oil into a mini food processor and blitz until completely combined. Scrape the mass out onto a tray lined with parchment paper and use the back of a metal spoon to flatten the mixture into a large, compact square approx.  3/4-inch high.
  2. Scatter over the shredded coconut and use clean hands to ‘press’ the coconut gently onto the surface.
  3. Place the tray into the fridge for about 20 minutes, then slice into small 1-inch squares.
  4. Store covered in the fridge.
